Choose the output before extraction
Copy and paste is efficient for a short passage. TXT is useful for plain content without layout. Searchable PDF is better when page appearance matters. Structured extraction is appropriate when you repeatedly need fields such as invoice number, date, and total.
Do not throw away the page image after extraction. It remains the source for checking OCR errors and visual context.
Improve the scan first

Use AI extraction with a narrow schema
If you need consistent fields, name them explicitly and define how missing values should appear. For example: vendor, invoice number, date, subtotal, tax, currency, total, and payment deadline.
AI extraction can still infer incorrectly. Review every field against the source before entering it into accounting, compliance, legal, or customer systems.
